Ingredients needed to make tacos shells

1 cup maize flour

¼ cup maida (plain flour)

Ingredients needed to make the stuffing

¾ cup kidney beans (rajma – soaked overnight)

1 finely chopped onion
-
1-2 tablespoon tomato ketchup
-
2 tablespoon butter
-
2 tablespoon ghee
-
½ teaspoon turmeric powder (haldi)
-
1 teaspoon red chili powder
-
1 teaspoon coriander powder
-
½ teaspoon garam masala
-
Salt to taste
Ingredients needed for serving

2 tablespoon chili sauce
-
4-6 tablespoon tomato ketchup
-
3 finely chopped spring onions
-
3 finely chopped tomatoes
-
2 cups of finely chopped lettuce leaves
-
1 cup of finely chopped cabbage

Salt to taste
Method to make tacos shells
1. Mix oil and salt in the flour (maize flour and maida) and knead into soft dough with water.
2. Roll the dough in a round shape (like a small chapatti) and prick with a fork.
3. Heat the oil and deep fry it on either side, remove it and immediately bend it to give a curve (like a “U” shape).
Method to make the stuffing
1. Cook the overnight soaked beans in a cooker; add a pinch of salt to it.
2. Drain the beans and keep it aside.
3. In a pan heat ghee and add onions to it, sauté for a few mins. Now add beans, tomato ketchup, salt, turmeric powder, red chili powder, coriander powder, garam masala and butter.
4. Mix and sauté for few more mins and slightly mash the stuffing.
Method to serve tacos
1. Mix tomato ketchup and chili sauce in a bowl to make a red sauce.
2. Mix chopped spring onions, tomatoes, cabbage and lettuce in a bowl with a little salt.
3. Take one taco shell, fill the beans stuffing add a little red sauce and top it up with chopped vegetables and again put a little red sauce over it. Repeat the same steps for all the tacos.
4. You can also add cheese and coriander leaves for garnishing.
