Ingredients You Need
1. For Toast Cases
Take 8 slices of whole wheat bread and 2 tsp butter
2. For Russian salad filling
Peeled, boiled and cubed potatoes, 1/4 cup
Boiled green peas, 1/4 cup
Peeled, chopped and boiled carrots, 2 tbsp
Boiled french beans, 2 tbsp
Peeled and chopped pineapple, 2 tbsp
Chopped apples, 2 tbsp
Chopped lettuce, 2 tbsp
Egg-less Mayonnaise, 2 tbsp
Fresh cream, 1 tbsp
Salt to taste
Freshly ground black pepper
Method
For Making Toast Cases
1. Take off crust from the bread slices.
2. Now wrap the slices in a muslin cloth.
3. Steam them in a cooker for about 5 to 7 minutes.
4. Once this is done, take out the slices and flatten them.
5. Press each slice into the cavities of a muffin tray which has to be greased with butter.
6. Spread a little melted butter over them and bake in the oven for 10 minutes.
7. Demould and keep aside.
For the Russian salad filling
1. Mix the ingredients as mentioned in a bowl.
2. Divide it into 8 equal portions.
3. Keep it aside.
How to Proceed Further
Fill the portions of the mixture so made in each toast case. Serve them immediately.
Useful Tip: The muffin trays are used in making cup cakes, etc. You can buy them from shops that sell cake moulds.
